I love sending treats to
school with the kids at different times during the school year.
These fun rainbow cookies are
great for St. Patrick’s Day or just for anytime!
To make the cookies, use your
favorite sugar cookie dough and split it into 6 pieces. The pieces don’t need to be equal in size…you’ll
need more red than purple once you start stacking.
Use gel food coloring to
knead rainbow colors into the dough.
Wrap and refrigerate for a few minutes to firm up the dough.
Then, roll out the dough (outer
layers a bit wider than inner layers) to a similar length. Then stack the dough and curve into a “U”
shape. Wrap in plastic wrap and freeze
for at least 1 hour or for several days if well wrapped.
To bake, preheat the oven to
350 degrees F and prepare baking sheets.
Remove the dough from the
refrigerator and cut into ¼ in slices, trimming any shaggy edges, as
needed. Bake for 10 minutes or until the
cookies are set. Then cool and serve!
