Here’s another fun but not too spooky halloween recipe!
Here, the classic spaghetti and meatballs turns into eyeballs with a few simple ingredients. The pickier eaters may not like the olives, but they are easily removed or omitted.

Spaghetti & Eyeballs
1 pound ground beef
¼ cup breadcrumbs
¼ cup grated parmesan
1 egg
1 ½ teaspoon Italian herb blend
1 tablespoon oil
1 (24 ounce) jar pasta sauce
4 slices provolone cheese, cut in 1-inch circles
Pimento stuffed green olives, sliced
1 pound spaghetti noodles, cooked al dente
Mix together the beef, breadcrumbs, parmesan, egg, and herbs. Shape into meatballs.
Heat the oil in a large skillet over medium heat. Add the meatballs and brown on all sides and cooked through. Remove meatballs.
Add the pasta sauce and heat through.
Put the meatballs back into the sauce. Top with cheese and cook until the cheese begins to melt. Add an olive to each meatball to make an eye.
Serve over spaghetti
A fun pre-begging meal as the kids head out the door.
