Carnitas Taco Salad

 

I love taco meat in pretty much any form.  Steak, ground beef, pork? All great. With homemade flour tortillas or on top of tortilla chips as super nachos - yaaassss!

But the most common way I eat taco meat is the leftovers as taco salad.  It’s just perfect and portable for lunch!


Today’s taco salad was a dinner salad after I had tons of leftover Crispy Pork Carnitas.


I personally love that the meat can go on here hot or cold and it’s still great.  Add all those favorite taco toppings like homemade salsa and guacamole and you’re set!

Carnitas Taco Salad


1 head romaine lettuce, chopped

1 can refried beans, heated

1 recipe guacamole

½ cup sour cream

½ cup salsa

½ cup shredded cheddar cheese

4 cups Crispy Pork Carnitas (warmed)

1 cup tortilla chips


Divide ingredients across 4 bowls and serve!

  2. An excellent way to use up leftovers. Though I don't prepare meat, I use up leftover bean chile to make taco salads. A healthy and filling meal especially when I feel lazy to cook.
