Sunday Funday is tapping into some creativity today and serving main dish meals in a muffin tin! This is such a great way to portion recipes or to make them super portable for tailgating or for school lunches!
Today’s recipe is a biscuit crust topped off with all the fantastic flavors of a bacon cheeseburger. So so good!
I made my favorite drop biscuit recipe for this dish, but to make this recipe even faster and easier, feel free to substitute refrigerated biscuits.

1 recipe Easy Drop Biscuits
1 pound lean ground beef
¼ cup diced onion
1 (8 ounce) can tomato sauce
2 tablespoons brown sugar
1 tablespoon mustard
1 tablespoon worcestershire sauce
Salt & pepper, to taste
¼ cup cooked crumbled bacon
6 ounces cheddar cheese, sliced
6 pickles, sliced
Preheat oven to 400 degrees F and spray muffin tins liberally with nonstick spray (you will need about 18 cups).
Heat a large skillet over medium heat. Add the ground beef and onion. Cook until beef is browned and onion is tender. Stir in the tomato sauce, brown sugar, mustard, and worcestershire. Simmer until most of the liquid is soaked into the meat. Add salt & pepper, to taste. Remove from heat and set aside.
Mix the biscuits according to recipe instructions. Divide the batter between the 18 wells of the muffin tin, making a small divot in the center of each.
Divide the bacon pieces equally between the biscuits followed by the meat mixture.
Bake in the preheated oven for 8 minutes, add cheese, bake for an additional 4-6 minutes or until biscuit edges are browned and cheese is melted. Top with pickle slices and serve.

ReplyDeleteAmy this was a fun theme. Besides a couple of recipes where I use muffin tin to make a meal, the theme made me do more research. And I am so impressed with this cheeseburger idea of yours. A fun party dish with endless possibilities.
