Today’s Sunday Funday is Blackberries and I decided to try something a little different and make my own flavored goat cheese.
This is fantastic in so many ways! It has the sharpness of the goat cheese, paired with a little sweetness from the roasted berries and then the earthiness from the rosemary - so good!
This goat cheese is perfect on crackers or part of a charcuterie board. It’s also great on a roasted beet salad or a hearty lettuce salad - the possibilities are endless!

Roasted Blackberry and Rosemary Goat Cheese
2 ounces blackberries
4 ounces goat cheese
2 sprigs rosemary, minced (about 1 tablespoon)
Salt & pepper
Preheat oven to 400 degrees F. Place the washed berries onto a piece of aluminum foil and fold over to make a packet. Bake in the preheated oven for 10-15 minutes or until berries are softened. Remove from oven and cool.
Place the goat cheese, roasted berries, rosemary, salt, and pepper in a bowl and stir to mix. Serve on salads or with crackers.
