I have a new favorite snack!
In fact, since it’s a little sweet sometimes this one is part of my lunch and takes the place of dessert.
I’ve always wanted to like fruity yogurts, but they are just stuffed with sugar and barely there fruit or a bunch of artificial sweeteners (ew).
So I decided it was high time I made my own. And while there is sugar in the berry sauce, it makes a lot of yogurt parfaits and I can easily control how much I want to put in each portion - I just love it!
Plus, the use of plain Greek yogurt means extra protein and the goodness of dairy with a bunch of fruit - so delish!

Triple Berry Greek Yogurt Parfait
Mixed Berry Sauce
2 cups mixed berries
¼ cup brown sugar
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
Parfait
1 (5.3 ounce) container plain Greek yogurt
1-2 tablespoons mixed berry sauce
2 tablespoons walnuts
2-3 fresh strawberries, sliced
1 teaspoon semi-sweet mini chocolate chips
To make the sauce, place the berries, sugar, cinnamon, and vanilla in a small saucepan over medium heat. Simmer until the berries are softened and release their juices, about 10 minutes.
Cool, then pour into a small blender or food processor and blend until smooth. Store in the refrigerator in an airtight container until ready to use.
To make the yogurt parfait. Place the yogurt and 2 tablespoons of berry sauce in a bowl and stir to mix. Mix in walnuts, strawberries, and chocolate chips and enjoy.
Amy, taking a liking to your favourite snack. I made some as soon as I read the recipe and oh my its so delicious and healthy too. I drizzled my favourite on top, maple syrup.
ReplyDeleteI've been avoiding fruit yogurts due to all the sugar. This sounds like the perfect solution.
