Today’s Sunday Funday is all about sandwiches! I’ve shared quite a few sandwiches on the blog, so I had to think a bit to find something worthy to blog about. I thought about a sandwich that I recently saw on a cafe menu that intrigued me: a dill pickle grilled cheese!
I’ve had cheesy fried pickles as an appetizer (usually with a spicy aioli dipping sauce), so I knew I liked the flavor combination. I decided to go for it and come up with my own sandwich version of this great app.
I grilled up my sandwich on homemade bread with 2 types of cheese and a sriracha ranch for a little kick and I loved it! It was a great little splurge on one of those rare evenings where Hubs was out of town and the kids were both gone for their own activities at dinnertime. This is definitely a sandwich I would make again!

Dill Pickle Grilled Cheese
Recipe by Amy’s Cooking Adventures
2 tablespoons ranch dressing
¼ - 1 teaspoon sriracha
2 slices bread (I used homemade)
1 slice muenster cheese
1 slice sharp cheddar cheese
3-4 baby dill pickles, sliced
2 tablespoon butter, softened
Mix together the ranch and sriracha, adjusting the amount to sriracha to personal spice preference (I used the full teaspoon). Set aside.
Heat a skillet over medium heat.
Spread the sriracha ranch onto one side of each piece of bread. Top each slice of bread with a slice of cheese. Layer the pickles over one side of the sandwich and flip the other half over.
Butter the outsides of the sandwich.
Place the sandwich into the hot skillet and cook until the bread is browned and cheese is beginning to melt. Flip and cook until the second side until browned and the cheeses are melted. Serve hot.
I've never thought to add pickle to my grilled cheese. Great idea and I love the addition of siracha mayo!!
