Ah, coffee.
I love my holiday specialty coffees but rarely treat myself. Instead, I try to replicate at home, especially since I can enjoy seasonal coffee year round if I make my own syrup!
Of course, homemade syrups aren’t exact, but this is close enough to my coffee shop favorite and I love that I can have it any time I want!
Peppermint Mocha Coffee Syrup
Adapted from Happi Homemade
1 cup water
1 cup sugar
2 tablespoons cocoa powder
2-3 teaspoons peppermint extract
Place the water in a saucepan over medium heat and heat until steaming. Stir in the sugar until completely dissolved, then whisk in the cocoa powder and peppermint extract. Continue whisking until the cocoa powder is completely dissolved.
Cool and store in a lidded container in the refrigerator. Use 1-2 tablespoons of syrup in coffee or cocoa.
