Oreo Icebox Cake


You guys.


No bake desserts are not my jam.


Today’s Sunday Funday theme was no bake desserts, so I decided to give it a whirl.  


When I think no bake desserts, pretty much only Jell-o comes to mind.  But how much Jell-o can someone make?


Then I came across an absolutely gorgeous icebox cake.  I decided to scale it down significantly and give it a whirl.



Mine was good (very rich) and interesting looking, but definitely not the beauty I saw in that other post.


So, if you want a mediocre icebox cake, follow the directions below.  If you want a cut above, follow the link to the inspiration recipe!

Oreo Icebox Cake

Adapted from The Bearfoot Baker


32 Double Stuf Oreo Cookies

4 ounces cream cheese, cold

2 tablespoons white sugar

¼ teaspoon vanilla extract

½ cup half & half

¾ cup powdered sugar



Remove the cream filling from the Oreo Cookies and set aside. 


Fit a stand mixer with the whisk attachment.  Beat together the cream cheese and sugar until smooth.  Add the cream filling and vanilla extract and mix until combined.


Add the half and half and beat on high speed until it begins to thicken.  Add the powdered sugar and continue beating as it thickens.


Spread a small amount of frosting over a serving plate.  Place 7 Oreo Cookies (without cream filling removed) in a circle shape.  Add a layer of frosting.  Repeat with another layer of 7 Oreos.  Continue until cookies and frosting are used up.


Refrigerate overnight, then serve.
