I used to have a second blog, but since I'm not keeping it up anymore, I'm slowly migrating my favorite recipes over to this blog!
I saw this idea for a campfire cake a while ago and I knew I had
to make it happen!
My boys had a Cub Scout potluck and I knew it was the perfect
opportunity to make the cake!
The cake itself is a chocolate cake, stuffed with toasted
marshmallow graham cracker filling and then frosted with chocolate
frosting!
It was as delicious as it was stunning to look at!
Campfire Cake

Cake:
1 recipe Rich Chocolate Cake
Toasted
Marshmallow Filling:
1 cup buttercream
½ cup graham cracker crumbs
12 marshmallows (regular size, not the minis)
To Decorate:
½ recipe Chocolate frosting
1 recipe Cookies ‘n Crème Rock Fudge
3-4 Pirouline cookies
Assorted red, orange, & yellow hard candies (I used
lifesavers and butterscotch candies)
Bake the chocolate cake (recipe here) in three 8-inch pans
(decrease cooking time by 5-8 minutes).
Cool completely.
Immediately after the cakes are done cooking, line a baking
sheet with parchment or a silicone mat.
Scatter the hard candies on the tray (no more than 1-inch apart). Place the tray in the hot oven for 5 minutes
or until the candy is melted.
Remove from the oven.
Run a butter knife or toothpick through the melted candy to swirl the
colors. Set aside until cooled and
hardened.
Lightly grease a baking sheet. Place the marshmallows on the sheet. Place under the broiler for 1-2 minutes or
until the marshmallows are toasted on one side.
Remove from the oven and cool slightly.
Once the marshmallows are cool enough to handle, place the buttercream,
marshmallows, and graham cracker crumbs in a bowl and stir to combine – the
mixture will be quite thick.
To assemble the cake, spread a small amount of chocolate
frosting on a cake board or plate. Place
one leveled cake, crumb side down on the board.
Top with half of the toasted marshmallow mixture. Place the second leveled cake, crumb side
down, over the filling. Repeat with the
remaining filling and the last cake.
Frost the entire cake with chocolate frosting. Create “stones” from the cookies ‘n cream
fudge, alternating colors. Add a ring of
stones to form a lip around the top of the cake. Use flatter pieces of fudge to cover the cake
board or plate.
Break up the pirouline cookies and place them in a circle on
top of the cake to represent logs.
Break up the cooled candy.
Place the shards on top of the cake to represent flames. Add a battery operated candle to light up the
flames, if desired.
