Can I tell you how much I love pumpkin cookies?
You guys, I love pumpkin cookies!
I’m *almost* team pumpkin-spice-all-the-things, but there are
some things that simply shouldn’t be pumpkin spiced, but I digress.
Pumpkin and pumpkin spice are seriously the best things about
fall!
So obviously when #PumpkinWeek rolled around, I definitely
wanted to make some cookies.
In this version of pumpkin cookies, I added molasses for some
awesome depth and to complement those nice, warm fall spices.

Chip Cookies
Adapted from Very Best Baking
½ cup butter, softened
1 cup white sugar
½ cup brown sugar
1 cup pumpkin puree
1 egg
2 tbsp molasses
1 tsp vanilla extract
3 ½ cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground ginger
¾ tsp ground cinnamon
½ tsp ground cloves
½ tsp salt
2 cups mini chocolate chips
½ cup sugar, for rolling
Preheat the oven to 350 degrees F and line baking sheets with
parchment or silicone mats.
In the bowl of a stand mixer, beat together the butter and
sugars until creamy.
Stir in the pumpkin, molasses, egg, and vanilla, mixing until
smooth and combined.
Add in 3 cups of flour, baking powder, baking soda, salt, and
spices. If the mixture is too wet, add
in the remaining ½ cup of flour. Stir in
the chocolate chips.
Scoop out 2 tablespoons of dough. Dredge the dough ball in the remaining sugar
and place on baking trays. Press down
lightly on the dough balls to flatten slightly.
Bake in the preheated oven for 12-15 minutes. Cool completely, then store in an airtight
container.
