Buffalo Cauliflower

 Buffalo Cauliflower is a healthy & delicious side dish or snack!


I love cauliflower but only when it’s cooked.  Lately I’ve been loving roasted cauliflower in particular (just a little pepper, & parmesan), but sometimes I like something a little different.

Cue Buffalo Cauliflower.

It’s spicy, delicious, and not pretending to be what is not (cuz, let’s be serious, no one is going to believe the cauliflower is potatoes, rice, or pizza crust.)


Anyhow, when I make this, I pull out a scoop of cauliflower for the kiddos before adding the hot sauce, so everyone can enjoy it!  Hubs and I love the spicy version with bleu cheese (me) or ranch (hubs).

And it’s totally healthy, so you can have as much as you’d like!



Buffalo Cauliflower

1 large head cauliflower
¼ cup hot sauce (such as Frank’s)
½ - 1 tsp sriracha, optional
Dash of garlic powder
Dash of paprika


Preheat the oven to 400 degrees F and line a baking sheet with parchment or a silicone baking mat.

Cut the cauliflower into florets and place on a single layer on the prepared pan.  Bake for 20 minutes, flipping half way through.

Remove the cauliflower for the oven and place in a heat proof bowl.  Whisk together the hot sauce, sriracha, garlic, and paprika.  Pour the sauce mixture over the cauliflower and stir to coat.  Place the cauliflower back onto the baking sheet and bake for another 10 minutes.

Remove from the oven and serve with bleu cheese dressing and celery.
