Chicken Chickpea Pitas


Don’t you love a cool refreshing sandwich on a hot summer day?

In this sandwich, the protein & veggies are marinated in a bright punch of flavor that just scream summer!

And if you prefer a vegetarian sandwich, you can easily swap out the chicken for more chickpeas or tofu!



Chicken Chickpea Pitas
Adapted from Taste of Home

Dressing
2 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
1 tbsp lemon juice
½ tsp black pepper
½ tsp salt
½ tsp sugar
1 tbsp fresh oregano, minced
1 clove garlic, minced

Filling
1 cup chickpeas
2 chicken breasts, cooked & diced
2 tbsp onion, minced
2 tbsp feta, crumbled
½ cucumber, diced
1 tomato, diced

4 Whole Wheat Pitas, cut in half
Lettuce


Whisk together the sauce ingredients. 

Combine the filling ingredients and stir in the sauce (I didn’t use all of the sauce).  Cover and chill for 30 minutes.

Open the pitas.  Stuff with lettuce and the chicken filling.  Serve immediately.

Makes 8 pitas
