“Sittin’ by the Campfire” S’mores Cookies




I shared these cookies last year as a guest post, but they are so, so good, and one of my favorite recipes, so I thought it could use another look-see!


These lovelies are a brownies mix base with graham crackers and more chocolate stuffed inside.  Then a marshmallow is toasted on top while they finish baking and topped off with a Kiss!  Did I mention that the chocolate is my favorite part of a s’more?

Enjoy these cookies with a big ‘ol glass of milk and imagine you’re sitting by a campfire!


“Sittin’ by the Campfire” S’mores Cookies
An Amy’s Cooking Adventures Original Recipe

1 family sized box brownie mix
2 large eggs
½ cup canola oil
½ tsp coarse sea salt
1 cup (about 6 cracker sheets) graham crackers, broken
1 cup Mini Hershey Kisses
20 large marshmallows
20 Hershey Kisses, unwrapped


Preheat the oven to 350 degrees F and line several baking sheets with parchment paper.

In a mixing bowl, stir together the brownie mix, eggs, oil, and salt until well combined. The mixture will be quite thick.

Fold in the graham cracker pieces and mini Hershey kisses.  Use a medium cookie scoop to drop about 2 tablespoons of dough onto the prepared cookie sheets, about 2 inches apart.

Place the cookies, one tray at a time, in the oven to bake. Bake for 6-8 minutes or until the edges are set, but the middle is a bit underdone (it will finish cooking under the broiler).

Turn the oven to broil and place 1 marshmallow into the center of each cookie. Broil on a lower rack for 1-2 minutes (watching carefully) until the marshmallows are lightly browned.

**Warning: Parchment paper is not meant to go under the broiler. Either move the cookies onto an unlined baking sheet or use extreme caution while broiling.

Once the marshmallows are lightly browned, press one Hershey Kiss into each marshmallow and move to wire racks to cool.

Continue baking the remaining cookies.

Makes 20 cookies
