Last week I shared my
Grandma’s recipe for homemade egg noodles, so now it’s time to share her
Chicken & Noodles! My grandma made
this dish frequently when we went to visit, so I always think of her when I
make chicken and noodles. I am so glad I
can share her recipe with my own family!
As a side, Chicken &
Noodles may not be much to look at, but it is comforting in every way! Enjoy!
Recipe Notes:
*You can also start this recipe with a whole chicken. Simply add the chicken to a large stock pot along
with an onion, carrot, couple ribs of celery, and salt to taste. Fill the pot
with water and simmer for 1 ½ hours.
Strain out the solids, reserving the chicken meat, and continue on with
the recipe.
Chicken and Noodles
Recipe from Grandma Ginny
1 batch homemade egg noodles
8 cups chicken stock
1-2 cups hot water, if needed
2-3 cups cooked chicken
2 tbsp water + 2 tbsp flour,
whisked together
Salt and pepper to taste
Heat the chicken stock to a
boil. Add the noodles and simmer for 30
minutes, stirring occasionally. The
pasta will absorb a lot of liquid, so add more hot chicken stock or hot water,
if needed.
Once the noodles are fully
cooked, stir in the cooked chicken and the water and flour mixture. Simmer for another 10 minutes or until the
sauce has thickened. Add salt and pepper
to taste and serve with a crusty roll.
