Today is my husband's birthday. Since he loves brownies, I decided to make his favorite dessert, but kick it up a notch. For his birthday, I made an elegant brownie cheesecake with dipped strawberries.

Brownie Cheesecake
Adapted from Kraft Recipes
1 (10.25 oz) package of brownie mix
Eggs, oil, & water as indicated on brownie package
2 (8 oz) packages cream cheese, softened
½ cup sugar
½ tsp vanilla
¼ cup light sour cream
2 eggs, room temperature
Melted chocolate, optional
Preheat oven to 325 degrees. Grease an 8x8 inch pan with cooking spray.
Prepare brownie mix as directed on the packaging. Pour batter into the prepared pan. Bake for 20 minutes or until the top is shiny and the center is almost set.
Meanwhile, beat the cream cheese, sugar, and vanilla in a mixer until smooth and well blended. Add the sour cream and mix well. Add the eggs to the cream cheese mixture on low speed, one at a time until just blended.
Gently pour the cream cheese mixture over the brownie layer (in the pan). Bake for 40 minutes of until the center is almost set. Run a knife around the pan to loosen the sides.
Cool and refrigerate for 4 hours.
Melt some baker’s chocolate and drizzle over the top. Serve chilled and with dipped strawberries.
