Last year, I made St. Patrick’s Day Cupcakes. This year, I took the same idea and translated them into brownie bites!
You could totally use store bought brownie bites for this, or, if you ave a little time, I adapted my favorite brownie recipe into brownie bites and they are so so good!
These little treats are festive and delicious!

St. Patrick’s Day Brownie Bites
Adapted from The Bakermama
Brownies
⅓ cup (1 stick) butter
1 cup semi sweet chocolate chips
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
¾ cup flour
½ cup cocoa powder
½ teaspoon baking powder
¼ teaspoon salt
Decoration
4 ounces white chocolate, melted
Gold sanding sugar
Rolos candies
Mini rainbow airheads extremes bites.
Preheat oven to 350 degrees F and liberally grease a 24-cup mini muffin tin.
Place the butter and chocolate chips in a microwave-safe bowl and heat in small intervals, stirring each time, to melt until smooth.
Whisk in the sugar, egg, and vanilla. Stir in the flour, cocoa, baking powder, and salt.
Divide the batter evening between the muffin cups (they will be mostly full).
Bake in preheated oven for 12-15 minutes or until set. Remove from the oven and cool completely.
Remove cooled brownie bites from the tin.
Melt the white chocolate. Dip the tops of the brownie bites in the chocolate, then add airheads, sprinkles, and rolos to make a little St. Patrick’s Day scene.
I would love a couple of these little bites after our Corned Beef and Cabbage dinner.
