Bacon Cheeseburger Stuffed Meatballs

 

Today’s Sunday Funday theme is meatballs.  


This was surprisingly tricky for me since I have my tried and true.


Even Spaghetti and Meatballs is a variation on the same (though as I wrote this, I realized I’ve never actually shared that variation even though I thought I did…oops - next time!)


I’m not sure why, but lately I’ve been on a Bacon Cheeseburger kick.  It started with wanting to recreate a meal I’d enjoyed last summer (Bacon Cheeseburger Salad), then with a soup that Dude asked me to make (Bacon Cheeseburger Soup), so maybe I just have bacon cheeseburgers on the brain?



Anyway, I decided bacon cheeseburger meatballs were the way to go, with the bacon and cheese stuffed into the meatball with all those classic burger flavors in the meatball itself.


The kids were skeptical at first, but in the end, they were enjoyed by all.

Meatballs

Bacon Cheeseburger Stuffed Meatballs


1 pound ground beef

⅓ cup breadcrumbs

1 tablespoon worcestershire sauce

1 tablespoon mustard

1 tablespoon ketchup

Salt & pepper, to taste

4 ounces sharp cheddar, cut in 16 chunks

2 tablespoons crumbled bacon



Preheat oven to 400 degrees F and line a baking sheet with parchment or a silicone mat.


Place the ground beef, bread crumbs, worcestershire, mustard, ketchup, salt and pepper in a bowl and mix to combine.


Divide the meat into 16 portions and flatten.  Add a pinch of crumbled bacon and a chun of cheese to the center of each piece, then wrap the meat around the cheese to seal.


Place on the baking sheet and bake for 15 minutes or until cooked to 165 degrees F in the center.


Serves 4
