Potato Smiles

 

Potato Smiles are a commercially available frozen food.  I’ve really only had them at church breakfasts.  They are kinda like a tater tot, but softer (like fried mashed potatoes).


Rewind to Spud getting his second round of braces on.  New braces are always a tough time.  Teeth hurt so much for about a week that it is difficult to eat anything that is not liquid or very, very soft.



Since my picky eater loves potatoes, I decided to try my hand at potato smiles, starting with mashed potatoes, and then pan-frying.


Alas, Hubs and I enjoyed them and thought they were cute and both kids were thoroughly unimpressed (darn teenagers).  Plus, Spud was too busy being mad that his teeth hurt to really give these a chance.


However, if you want something a little different and you don’t have a moody teenaged crowd, these will probably be a hit.

Potato Smiles


1 pound potatoes

1 tablespoon butter

2-4 tablespoons milk

½ - 1 teaspoon seasoning salt

Bacon drippings and/or butter for frying


Boil the potatoes.  Drain once fork tender.


Add the butter, milk, and seasoning salt to the hot potatoes and mash.  Cover and refrigerate for one hour.


Heat 1 tablespoon of bacon drippings or butter in a skillet over medium heat (I like to use a mix).


Form the cool mashed potatoes into flattened patties.  Use a knife to make a smile (be sure to cut almost all the way through the patty so the face stays distinct through cooking).  


Place face down in the hot pan.  Cook for 3-4 minutes or until deeply browned.  Flip, then cook for another 2-3 minutes or until the backside is browned and the patty is cooked through.


Serve hot.
