Zambian Spinach


This month’s Eat the World is headed to Zambia.


Looking at the top recipes from Zambia, I noticed that this country had the potential to really stretch my culinary tastes.  Lots of beans, curry, okra, and beef offal.  Ooof, a tough sell with my crowd.  And most of the ingredients aren’t even available in my area.



Luckily, I kept digging and found the simplest spinach recipe - almost too east, to be honest, but it was delicious so I went with it!  It was light and tasty - a perfect quick, easy side dish!


Zambian Spinach

Adapted slightly from Zambian Kitchen


1-2 tablespoons olive oil

1 small onion, diced small

2 small roma tomatoes, diced small

1 clove garlic, minced

5 ounces fresh spinach

Salt & pepper, to taste


Heat the oil in a large skillet over medium heat.  Add the onions and cook until soft, about 5 minutes.  Add the tomatoes and garlic and cook for another 3 minutes.


Add the spinach and cook until wilted.  Season with salt and pepper and serve as a side dish.
