Peanut Butter Energy Balls (No Bake)

Last week’s Sunday Funday was all about the New Year treats, so I broke my cardinal rule and deep fried some cheesy pickles (ugh, so good), but now it’s New Year’s Resolution time.  Time to eschew the overindulgence of the holidays for healthier habits.


But it’s really hard to break the snacking habit, so today’s Sunday Funday is all about making healthier snacking choices.


Personally, when I start snacking I tend to go for a small bag of cheddar popcorn, or a handful of nuts, or an apple, none of which are an actual recipe.


Then I got to thinking about energy bites and I knew I wanted to try them.  These are simple and delicious to make - plus, I added a little hint of espresso powder for a little caffeine boost, because why not?

Nutritious Nibbles



Peanut Butter Energy Balls (No Bake)

Adapted slightly from All Recipes


½ cup rolled oats

¼ cup mini chocolate chips

¼ cup ground flax seed

¼ cup peanut butter (preferably “No Added Sugar”)

2 tablespoons honey

½ - 1 teaspoon finely ground instant coffee powder

½ teaspoon vanilla extract


Line a freezer safe container with parchment paper.


Place all ingredients in a bowl and stir until completely mixed.  Use a 1-tablespoon cookie scoop to portion out energy balls.  Roll lightly between hands to smooth, then place in the prepared dish.  Cover and freeze for 1 hour or until set.


Move to refrigerator to thaw slightly before enjoying.


Makes about 15 Energy Balls
