Fried Cheesy Pickles


Every once in a while, the kids ask me to recreate a deep fried recipe.  And I always make a baked version because I don’t deep fry.


But, one weekend this past fall, I borrowed an electric deep fryer from a coworker and launched into a weekend of deep frying (expect to see those recipes eventually).


One of the recipes I definitely wanted to try was a local delicacy: deep fried pickles.


These are pickles, wrapped in havarti cheese, wrapped in an eggroll wrapper and deep fried - they are so delicious!


Because I’m me, I made homemade eggroll wrappers, but store bought would work too.



This recipe comes from Food Network star Molly Yeh who is now kinda local to my area and you guys!  I was seated at her table at a fundraiser last spring!!!  I kept my cool all through dinner, but when I saw her leaving before the entertainment, I had to be that person and ask for a picture - no regrets! 




She is super nice and I had a blast at her table! So I was extra excited to finally read her cookbook and make a recipe from it afterward!

This cookbook was a fun read. The stories intermixed with the recipes are written personably, almost as if the reader is sitting down for a cup of coffee with the author.

Some of the recipes are a little out there, but many are straight up comfort food. I can see myself making may of the recipes!

New Year's Eve Nibbles


Fried Cheesy Pickles

Adapted Slightly from Molly on the Range by Molly Yeh


3 baby dill pickles, patted dry

3 slices havarti cheese

3 homemade eggroll wrappers (I used this recipe cut in 5x5-inch squares)

Vegetable oil for deep frying


Heat oil to 350 degrees F.  


Place a slice of cheese over an eggroll wrapper.  Place a pickle in the center on a diagonal.


Fold in the short corners.  Then roll from one side.  Lightly wet the final edge with egg wash or water and seal.  Repeat with all ingredients.


Fryin the preheated oil for  3-4 minutes or until golden-brown.  Drain on a paper towel lined cooling rack.  Slice in half and serve with sriracha ranch.


Makes 1 small appetizer portion

  1. I don't deep-fry very much either. But I would totally try this. And I love that you fan-girled with Molly Yeh. She looks like such a fun and down-to-earth celebrity! I am jealous.
