Skillet Granola

The other day, I was making a yogurt parfait and wanted to add granola, but I didn’t have any on hand and didn’t have enough time to make my regular recipe.

So I wondered if I could make a stovetop version.

The answer is yes!

This granola comes together incredibly quickly for when you need that parfait asap!

Since it is only very lightly sweetened, it doesn’t clump up as well as the baked version and lacks a certain depth of flavor, but it is still a great recipe to have on hand!

Skillet Granola

Adapted from Wife Mama Foodie

1 tablespoon butter

2 tablespoons honey

1 cup rolled oats

½ cup chopped walnuts

2 teaspoons ground flax

½ teaspoon ground cinnamon

¼ teaspoon ground ginger

Place the butter and honey in a large skillet over medium heat.  Cook until it begins to bubble.  Stir in the remaining ingredients and cook for an additional 3-5 minutes, stirring occasionally or until the oats and nuts are fragrant and beginning to brown.  Remove skillet from heat and allow granola to cool.

Store in an airtight container.
