Smooth Guacamole

 

Today’s recipe is a pretty straightforward guacamole recipe and it’s really just the method that's changed from my usual.


This one came about over the summer.  During the summer months, I have my kids cook 2 meals each per month for the family.  Since they’re getting older, I think it’s so important for them to have cooking skills.   


The rules are simple: they have to plan a complete meal (sides included), make a shopping list, and then make the meal (with me on hand to assist and advise as needed).  


They can choose anything they want, except prepackaged meals that only take reading skills (boxed mac & cheese, frozen pizza, ramen, etc, are all off limits).



I’ve noticed that they both have a tendency to choose their favorite meals, even if they are challenging (like when Spud made pizza from scratch).  Dude, on the other hand, has been stretching himself in a different way - he really wants to hone his grilling skills, so he usually picks something (and marinades it) for the outdoor grill.


Anyway, onto today’s recipe.  Spud wanted tacos, and not just any tacos but steak tacos and went full in making all components.  He marinated the steak (he put it on the grill, but then we passed that the hubs, because he had many other tasks to do), made homemade tortillas, and homemade guacamole.


But he didn’t want my cheat guacamole with the salsa.  Oh no, he wanted guacamole like the restaurant, but smooth instead of chunky.


So we took the basic recipe and tossed it in the mini food processor and he was thrilled with the results!

Avocado



Smooth Guacamole


1 avocado, peeled and seeded

¼ jalapeno, seeded

1 small tomato

1 slice onion (about 2-inches long, ¼ inch wide)

1 tablespoon lime juice

1 small clove garlic, peeled

¼ teaspoon salt

Cilantro, optional


Place all ingredients in the bowl of a small food processor.  Blend until combined. Serve with chips.

  4. Amy I made sure all my three kids learned to cook from a young age, starting them off with salads and milkshakes to condiments and meals. It is a skill everyone should know as prepacked meals are not always a healthy option. I like both the chunky and smooth guacamole, depending on the dish I am making.
