Honey Cookies

This month Cook the Books Club and Movies & Munchies are teaming up to read and watch The Secret Life of Bees.

Here’s my GoodReads review of the story.

The Secret Life of Bees
The Secret Life of Bees by Sue Monk Kidd
My rating: 4 of 5 stars

This book was not what I expected. Set in during the civil rights movement, the characters experience the joys and sorrows of racism but also abuse and feeling unwanted. All of the characters carry deep hurts and it is in finding one another that they begin to heal.

The movie followed the novel fairly well, but I felt the book was more nuanced and the movie was rushed and skipped key character development.

There were a few foods that were mentioned in both the book and movie, but since the cook focused on bees and a honey operation, I wanted to make something with honey.

Ultimately, I ended up with honey cookies, which use honey as the primary sweetener.  These cookies are soft, chewy, and have a distinct honey flavor, offering a delightful twist on the classic sugar cookie.

Honey Cookies

Recipe from The Fig Jar

½ cup butter, softened

½ cup brown sugar

½ cup honey

1 egg

1 ½ cups flour

½ teaspoon baking soda

½ teaspoon salt

Preheat oven to 375 degrees F and line baking sheets with parchment or silicone mats.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the brown sugar and butter until light.  Add the honey and egg and beat for another 1-2 minutes.

Add the flour, baking soda, and salt and mix until combined.

Drop 2 tablespoons of dough onto the prepared baking sheets and bake for 9-11 minutes or until golden brown around the edges.

Cool completely on the baking sheets, then move to a container.
