Oatmeal Banana Buttermilk Pancakes

Tom (Joseph Gordon-Levitt), greeting-card writer and hopeless romantic, is caught completely off-guard when his girlfriend, Summer (Zooey Deschanel), suddenly dumps him. He reflects on their 500 days together to try to figure out where their love affair went sour, and in doing so, Tom rediscovers his true passions in life.



I watched the movie and found it to be amusingly quirky.  I was inspired by an early scene to make pancakes!  These are a version of some earlier pancakes I made.  In addition to the movie inspiration, I also had half a container of buttermilk and an overripe banana I wanted to use up.

I absolutely loved these pancakes.  They were hearty and delicious and I loved Dude’s take on the toppings here: chocolate chips & strawberries! Yum!


 

Oatmeal Banana Buttermilk Pancakes


1 ½ cups oatmeal (quick or old fashioned oats)

1 cup whole wheat flour

1 teaspoon baking powder

¼ teaspoon salt

1 overripe banana, mashed smooth

2 cups buttermilk

4 ½ tablespoons unsalted butter, melted 

Chocolate Chips & Strawberries, to serve



If using old fashioned oats, place them into a small food processor and pulse several times until the oats are roughly chopped (do not process into powder).


In a large bowl, whisk together the oats, flour, baking powder, and salt.  Then, add the banana, buttermilk, and butter and stir until just combined.


Heat a skillet to medium heat and grease generously with butter (alternately, heat and electric skillet to 375 degrees F and grease with butter.)


Cook the pancakes until the bottoms are deeply browned, then flip and cook until the second side is browned.


Serve with chocolate chips or strawberries or a drizzle of maple syrup.


Makes about 20 4-inch pancakes
