Peanut Butter Cookies are such a classic!
And they’re always delicious! My favorite are the super simple 3-ingredient peanut butter cookies, but I like to add a fourth ingredient...melted chocolate!
The chocolate dip brings that perfect marriage of chocolate and peanut butter to the table. Spud and I agreed that this is our favorite new way to enjoy these cookies!
Chocolate Dipped Peanut Butter Cookies
Adapted slightly from Barefeet in the Kitchen
1 cup sugar
1 cup peanut butter
1 egg
Chocolate chips or candy melts, as needed
Preheat the oven to 350 degrees F and line a baking sheet with parchment or silicone mats.
Stir the sugar, peanut butter, and egg together (use a stand mixer or bowl & spoon) until smooth and combined.
Scoop a tablespoon of dough and roll it into a ball. Place the dough balls on the prepared baking sheet.
Use a fork to press the dough flat. Turn and press again, making a grid pattern.
Bake the cookies in the preheated oven for 12-14 minutes.
Allow the cookies to cool on the baking tray.
Once cool, melt the chocolate. Dip each cookie into the chocolate and add sprinkles if desired. Allow the chocolate to set before serving or storing.
