I could try out a yummy apple recipe!
I ended up adapting the recipe included on the pan a bit to
make some apple muffins to take to work with me as a little treat for my
co-workers!
I’m always a little worried when I use a pan I can’t line
with parchment, but the non-stick feature on the cakelet pan is no joke! When sprayed with cooking spray, I had
absolutely no sticking and the design imprinted perfectly!
These little cakelets are the perfect addition to a fall
brunch! How perfect would these be on a
Thanksgiving brunch buffet??
Apple Cinnamon Cakelets
Adapted from Nordicware
1 ½ cups all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
¼ teaspoon ground cloves
Dash of salt
½ cup brown sugar
5 tablespoons butter, melted
1 egg
½ cup applesauce
½ cup buttermilk
Preheat the oven to 375 degrees F. Spray apple cakelet pan liberally with
cooking spray.
In a large bowl, whisk together the flour, baking powder,
baking soda, cinnamon, ginger, cloves, and salt.
In a sperate bowl, whisk together the butter and sugar. Add the egg, applesauce, and buttermilk and
whisk until combined.
Pour the wet ingredients into the dry and gently mix until
combined.
Divide the batter into the cakelet wells, filling them each
about ¾ full (bake any additional batter in a muffin tin). Bake in the preheated oven for 12-15 minutes
or until a toothpick inserted into the center comes out clean.
Cool on a wire rack in the pans for 10 minutes, then flip to
unmold.

My favorite apple recipe is cinnamon apple crisp. I use oats, brown sugar, vanilla, fuji apples, cinnamon, sugar and real butter.

DeleteI did not make mine gluten free. I also changed the spice profile a bit.
