Hubs has been out of town for the last week and a half, so
the little dudes and I decided to treat ourselves to a movie date!
We’ve loved the first two Despicable Me movies (and the
Minions movie) so we decided to watch the third installment (the kids cracked
up the whole time (it was pretty cute!))
Afterward, I decided to surprise the kids with Minion
pancakes!
I adapted my favorite multigrain pancakes to make them banana
pancakes (bananas are a throwback to the first movie - they didn’t show up this
time!)
You guys – the kids were ecstatic!
Right away Spud shouted, “It’s Kevin & Bob & Stuart!”
Needless to say, the pancakes were both delicious and cute
and a total crowd pleaser. Perfect for
the movie and for a little treat when Dad is out of town!
Minion Multigrain
Banana Pancakes
¾ cup whole wheat flour
¼ cup cornmeal
¼ cup old fashioned oats
¼ cup ground flax
½ tsp baking soda
½ tsp salt
1 egg
1 very ripe banana, mashed
1 ¼ cup buttermilk
2 tbsp unsalted butter, melted
Banana slices, blue candy melts, dark chocolate candy melts,
M&Ms, optional
In a large bowl, whisk together the flour, cornmeal, oats,
flax, baking soda, and salt.
In a separate bowl, whisk together the egg, banana,
buttermilk, and butter.
Stir the wet ingredients into the dry ingredients and stir
until just moistened.
Pour 3-4 tablespoons of batter onto a hot, greased
skillet. Cook for 1-2 minutes or until browned, flip and cook on the
other side.
If desired, place 2 dark chocolate candy melts on the hot
pancakes. Top with banana slices and
blue M&Ms. Melt additional dark
chocolate candy melts to make pupils and a smile. Melt blue candy melts to make the minion’s
overalls.
