My family loves going to Qdoba.
We love the queso (enough to make a couple versions at home –
here and here) and the chicken quesadillas!
Spud recently got on a Qdoba tear and decided that we needed
to go there twice in one week (we typically eat out every couple weeks or so
unless we’re traveling).
The answer was a resounding nope, but I did agree to make him
quesadillas at home with chicken as close to Qdoba as I could get it!
It was pretty close, too and now an “I want Qdoba” staple in
our house!
Qdoba-Style
Chicken
Adapted from Gimmie Delicious
1 ½ lb boneless skinless chicken thighs
1 tbsp oil
¼ cup orange juice
1 tbsp lime juice
1 tbsp tomato paste
2 tsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp ground cumin
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
Heat the oil in a large skillet over medium heat.
Cut the chicken into bite-sized pieces. Please the chicken in the skillet, along with
all remaining ingredients. Cover and
simmer until the chicken is cooked through.
Crack the lid of the skillet and continue cooking until all of the
liquid is cooked off.
Serve on tortillas with your favorite taco toppings.
To make quesadillas, place chicken, Pico de Gallo, and monterey jack cheese on a tortilla. Top with a second tortilla and grill in a Foreman grill or panini press until cheese is melted.
