I did that thing again.
I bought a bunch of bananas, thinking I was actually going to
eat them.
Then I let them sit on the counter until they got all brown
and scary and attracted fruit flies (where do those things come from?!?)
So it was time to play with banana bread again.
This time, I wanted to add chocolate chips and coffee. Then I decided to go all in and add peanut
butter too.
The results were completely amazing. The kids absolutely demolished a loaf after
school one day and if that’s not a stamp of approval, nothing is!
Peanut Butter
Chocolate Chip Banana Bread
½ cup butter, softened
½ cup sugar
½ cup peanut butter
3 ripe bananas, mashed
¼ cup strongly brewed coffee
2 eggs
Dash of salt
1 tsp baking soda
2 cups flour
1 cup mini chocolate chips
Preheat the oven to 350 degrees F and grease 2 loaf pans.
Cream the butter and sugar in a stand mixer fitted with the
paddle attachment. Scrape down the sides
and add the peanut butter, beating until smooth and fluffy.
Next, add the bananas, coffee, and eggs; mix until completely
combined.
Add in the salt, baking soda, and flour and mix until
combined. Stir in the chocolate chips.
Divide the batter evenly between the loaf pans. Bake for 45-60 minutes or until the tops are
browned and a toothpick inserted into the center of the loaf comes out clean.
Cool in the pans for 5-10 minutes, then invert and cool on
wire racks.
