Breakfast for dinner happens (at least) once or twice a month
in my house (more if Hubs is out of town).
Since I finally successfully made chocolate waffles, I
decided to try my hand at chocolate pancakes.
Then, I thought, I make chocolate protein muffins all the time – why not
try for chocolate protein packed pancakes.
Challenge accepted.
I adapted my multigrain pancake recipe adding protein powder,
three types of chocolate (ovaltine, cocoa powder, & chocolate chips) plus
peanut butter and banana (for sweetness).
The pancakes were absolutely perfect. They satisfied the chocoholic in all of us
and I was happy with the hidden protein and fruit! Win-win!
Triple Chocolate
Protein Pancakes
½ cup whole wheat flour
¼ cup all purpose flour
¼ cup cornmeal
¼ cup old fashioned oats
2 tbsp ground flax
2 tbsp unsweetened protein powder
2 tbsp Ovaltine
2 tbsp dark cocoa powder
½ tsp salt
½ tsp baking soda
2 tbsp honey
2 tbsp butter, melted
1 tbsp peanut butter
1 ripe banana, mashed
1 egg
1 ¼ cups lowfat milk or buttermilk
2 tbsp mini chocolate chips
Syrup or whipped cream, to top
Fresh fruit, for serving
Preheat a skillet to medium (350) and grease with butter.
In a large bowl whisk together the flours, cornmeal, oats,
flax, protein powder, ovaltine, cocoa powder, salt, and baking soda.
In a separate bowl, whisk together the honey, butter, and peanut
butter. Add in the egg and banana, and
whisk to combine. Last, whisk in the
milk.
Pour the liquid ingredients into the dry ingredients and stir
until combined. Stir in the mini
chocolate chips.
Scoop 3-4 tablespoons of batter onto the hot skillet. Once bubbles form on top, flip the pancakes
and continue cooking for an additional 2-3 minutes.
Serve stacks of pancakes topped with whipped cream and fresh
fruit.
