It’s time for the final Secret Recipe Club reveal of
2015! This group will be back for another
great reveal in February! In SRC,
members are secretly assigned another blog, stalk the archives, and whip up
something delicious!
This month, I was assigned one of my SRC favorites, Jessie’s
blog, Jessie Weaver: the Vanderbilt Wife.
Jessie is a stay at home mom of 3 and freelance writer. Jessie also shares her reading lists (yay
fellow readers!). She is a faith filled
woman, as evidenced in many of her posts.
It was so hard to choose a recipe! She has so many delicious sounding
meals! Since it is so close to
Christmas, I nearly made her {a little boozy} Chocolate Butterscotch Cookies. Sadly, I spiked my hot cocoa a
few too many times and ran out of buttershots.
Alas. Next time.
So instead, I made a recipe I’ve had my eye on for a while now:
Savory Cornmeal Waffles! I dragged my
feet a bit making this recipe, because I had no clue how my family would
react. Hubs is totally easy going and so
patient with all of my experimentation in the kitchen (though I do get the occasional
eyebrow raise). Dude claims to hate
cheese (but loves cheese pizza, and parmesan) and Spud, well, there’s just no
telling what he’ll eat day to day (where did my adventurous eater go?!?)
However, I knew I would love the waffles, so I decided to go
for it and they were a HUGE success!
Dude and Spud managed to not even realize that these were anything but
their favorite waffles and gobbled them down…with syrup instead of fried eggs!
Hubs and I LOVED the waffles, especially with fried eggs,
bacon, and some roasted veggies on top!
Plus, Hubs went for a second helping, with the kid-approved syrup
version and gave an additional, savory-sweet stamp of approval!
This recipe is a winner through and through. Thanks, Jessie, for an amazing recipe!
Cheesy Cornmeal
Waffles with Fried Eggs
Adapted from Jessie Weaver
Waffles
¾ cup yellow cornmeal
½ cup whole wheat flour
½ cup all-purpose flour
1 tbsp baking powder
½ tsp salt
1 tbsp butter, melted
2 eggs
1 ½ cups buttermilk
2/3 cup shredded sharp cheddar cheese
1 ½ tsp dried minced onion
To top
Bacon
Fried eggs
Roasted cherry tomatoes
-or-
Butter
Maple syrup
Preheat the waffle iron.
In a large bowl, whisk together the cornmeal, flours, baking
powder, and salt.
In a separate, smaller bowl, whisk together the melted
butter, buttermilk, and eggs.
Pour the wet ingredients into the dry ingredients and stir
until combined. Gently fold in the shredded
cheese and minced onion.
Spray the waffle iron with non-stick spray and make waffles
according to manufacturer instructions.
Top waffles with bacon, egg, and roasted tomatoes. Alternately, slather with butter and maple
syrup.
Serves 4
