You guys.
Hubs is out of town for a week and a half.
It’s looooong.
Not only do I miss him, but Dude and Spud take
the opportunity to complain about absolutely everything I make for dinner.
It’s draining.
I had some odds and ends left over from dinner
before he left, so I decided to have a make your own pizza night and make
everyone happy (lies…Dude still complained that I don’t have the right
cheese. Seriously. Apparently I don’t have pizzeria cheese
magic.)
So Dude had his unsatisfactory pepperoni pizza
(and eventually picked off all the cheese and ate the crust), and Spud chose
cheese with no sauce (he ate his, at least), and I got to have a completely
amazing artisan pizza!
Fresh mozzarella, caramelized onions, garlic
sautéed spinach and BACON! YUM!
Delicious meals like this make the time go a
lot faster!
Now to figure out how to make something other
than mac & cheese and pancakes for the next nine days…
Caramelized
Onion, Spinach, & Bacon Pizza
Drizzle of olive oil
1 small clove garlic
Large handful fresh spinach
3 slices fresh mozzarella
1-2 slices cooked bacon, diced
Preheat the oven to 500 degrees (preferably
with a pizza stone).
Heat the oil in a skillet. Add the garlic and cook for 30 seconds, then
add the spinach and remove from the heat.
Set aside while the spinach wilts.
Roll the dough (homemade or store bought) into
individual or large rounds.
Add a small amount of sauce to the pizza. Top with mozzarella, sautéed spinach,
caramelized onions, and bacon.
Slide the pizza onto the pizza stone and bake
for 5 minutes or until the crust is browned and the cheese is melted.
