I just love summertime
grilling!
These brats just scream man
food, but trust me, ladies like these, too!
I recently made these for a
BBQ with friends and they were gone in no time flat!
You can use whatever
condiments you have on hand with these brats, but swiss and beer onions are an
amazing combination! Give it a try!
Bacon Wrapped Beer Brats

bottle Amber Beer or Lager
1
medium onion, sliced
1
tbsp Worcestershire sauce
½ tsp
ground mustard
¼ tsp
garlic powder
¼ tsp
salt
¼ tsp
pepper
5
bratwursts
5
slices thick cut bacon
5
slices Swiss cheese
5 hot
dog buns
Place
the beer, onion, Worcestershire, ground mustard, garlic powder, salt &
pepper in a medium saucepan and whisk to combine. Heat to a simmer.
Puncture
the brats with the tines of a fork and add them to the pot, covering with
liquid as much as possible. Simmer for
15 minutes, turning the brats once, half way through.
Remove
the brats. Continue simmering the liquid
until mostly reduced and the onions remain.
Set aside.
While
the brats cook, par-cook the bacon. Cook
the bacon in a skillet over medium heat for 2-3 minutes or until the fat becomes
slightly translucent, but before it begins to brown. The bacon should still be very pliable and
will look undercooked.
Preheat
the grill and wrap the brats in the par-cooked bacon, using toothpicks to
secure the bacon.
Place
the brats over indirect heat over the grill, watching carefully for flares
ups. Cook for about 15 minutes or until
the bacon is crisp.
During
the last couple of minutes of cook time, place the cheese on the buns and place
on the grill to melt.
To
serve, place a bacon wrapped brat on the prepared buns and top with reserved
beer-onion sauce.
