It’s Muffin time!
These little muffins made my
heart sing! They are packed full of
whole grains and fruit AND the sweetness comes from a the bananas and a bit of
honey…no sugar!
I was more than happy to let
my boys gobble these up for after school snacks (and they were begging for
more!)
Pumpkin Banana Muffins
Inspired by Taste of Home
1 cup whole wheat flour
½ cup all purpose flour
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
2 eggs
½ cup mashed bananas, about 1
medium
½ cup pumpkin puree
½ cup canola oil
4 tsp honey
¼ cup mini chocolate chips
Preheat the oven to 350
degrees F and line a muffin tin with paper liners.
Whisk together the whole
wheat flour, flour, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk
together eggs, bananas, pumpkin, oil, and honey.
Add the liquid ingredients to
the dry ingredients and mix until combined. Stir in the chocolate chips.
Divide the batter evenly
between the muffin cups. Bake for 15-18
minutes or until a toothpick inserted into the center comes out clean.
Makes 18 muffins
So many pumpkin recipes this time of year, I LOVE IT!! Sounds delicious :)

Yum! Those sound so great! Love that you used some wheat flour. We like to incorporate wheat flour, too. :)
