When I was growing up, my mom
pan friend potatoes almost every time we ate steak…which was mostly for
birthdays and special occasions…so not all that often.
Anyhow, the potatoes were so
addicting and delicious! When I first
got married and started cooking, I asked my mom for the secret to those
delicious potatoes. Know what it was? Fry them in bacon drippings and butter. Yep, that’ll do it!
Needless to say, these are
not an every day side dish. I sometimes
make them a bit healthier by replacing the fats with a drizzle of olive oil,
but bacon grease and butter is what really makes these sing.
So for special occasions
(Father’s Day, in this case) I whip out this recipe and savor every delicious,
crispy bite!
The Best, Crispiest Skillet Potatoes
Recipe from my Mom
1 lb potatoes, cut in 1-inch
cubes
1 tbsp bacon drippings
1 tbsp butter
Black pepper
Heat the bacon drippings and
butter in a large skillet over medium-high heat until the butter is bubbly.
Add the potatoes and season
generously with seasoning salt and pepper.
Cook, stirring occasionally until the potatoes are browned on all
sides. Turn the heat to medium-low and
continue cooking until the potatoes are cooked through (do not cover, or those
crispy brown skins will get soggy!)
Serve immediately.
Serves 3-4
