Beer-Lime Chicken

One of the few foods my boys will eat on a regular basis is chicken.

I also love chicken, but it’s really easy to get stuck in a chicken rut and get really sick of plain old chicken.

That’s why I love marinades like Beer-Lime Chicken!  It adds interest to the same old meal and keeps things fresh and interesting!

Recipe Notes:
*I used a dark Leinenkugel 1888 Bock in this recipe

Beer-Lime Grilled Chicken
Adapted from All Recipes

1 lime, juiced (about 1 tbsp)
1 cup beer (see recipe notes)
2 tbsp extra virgin olive oil
1 tsp honey
2 cloves garlic, minced
¼ tsp salt
¼ tsp black pepper
2 lb boneless, skinless chicken breasts or thighs

Whisk all ingredients (except the chicken) together in a large measuring cup.

Place the chicken in a gallon sized resealable bag.  Add the marinade and turn to coat.  Refrigerate for 1 hour or overnight, flipping several times.  Or place in the freezer and use within 1 month, the chicken will marinate as it thaws.

Grill the thawed chicken over medium-low heat for about 20 minutes, flipping once.

  2. I love Leinenkugel - it's so good. I've had a recipe for a lime beer chicken, but it didn't turn out. Definitely will have to try yours :) Thanks for linking up to Tasty Thursday.
