Grown Up Egg McMuffin



I used to love Egg McMuffins.  But as my tastes become more refined, I’m realizing that the fast food version is quite greasy and usually results in a stomachache. 

When I was in high school, my mom used to make me a simplified homemade version of an Egg McMuffin when I had finals.  She made it with a soft boiled egg and a big slice of Velveeta cheese.  It almost made finals worth it.


Now, on days when I’m feeling extra ambitious, I make myself this grown up version of my favorite breakfast sandwich (even if I don’t have any finals.)


Grown Up Egg McMuffin
An Amy’s Cooking Adventures Original Recipe

2 slices whole wheat toast, cut in 4 inch circles (or 1 English Muffin)
2 slices deli ham
1 tbsp shredded cheese
1 oz avocado, sliced
1 egg, soft boiled (directions follow)
Salt & pepper to taste



To soft boil the egg:
Bring a small pot of water to a boil.  Add a room temperature egg and boil for 3-5 minutes.  Remove and run under cold water to peel.

To make the sandwich:
Sprinkle the cheese over 1 slice of toast or half of English muffin.  Add the ham.

Break the egg over the top and add the avocado, salt and pepper, and the second piece of toast.  Enjoy hot.

Makes 1 sandwich

  5. Soft boiled eggs are my favorite! My mom made them, put a few in a bowl with a piece of cut up buttered toast and it was our favorite weekend breakfasts :-)
