I just shared my new favorite Bacon Guacamole Sandwich, so I’d thought I’d also share its Vegetarian Friday
counterpart!
Of course, one could simply omit the
bacon from the previous sandwich, but I like to add a fried egg for extra
protein and flavor. Serve with a bowl of
tomato soup for lunch or with fruit for breakfast!
Recipe Notes:
*I love the way the yolk oozes in to the rest of the
sandwich, but if you’re not a fan, scramble your eggs instead.
Avocado & Egg Grilled Cheese
1 egg
2 slices whole wheat bread
¼ cup shredded Cheddar Jack
cheese, divided
¼ cup 5 minute guacamole
Small handful spinach
leaves, roughly shredded
Butter or margarine
Heat a small skillet over
medium-high heat. Fry the egg over easy and set aside.
Meanwhile, butter one side of each slice of
bread.
On the unbuttered side of
one slice, sprinkle half the cheese. Add
the guacamole in large dollops, then spread it to the edges of the bread. Then add the spinach leaves and the fried
egg. Top with the remaining cheese and slice
of bread, buttered side up.
Place the sandwich into the
hot skillet. Cook for 1-2 minutes or
until the bread is toasted, flip and cook and additional 1-2 minutes or until
the bread is toasted and cheese is melted.
Serve immediately with a side of tomato soup.
Oh yum! I would love to have this for my breakfast sandwich! It looks amazing - a good fried egg on toasted bread - not much better than that in the morning!
